Typical of the municipality of Roero, Salsiccia di Bra is the only sausage made from veal that boasts the Royal Concession of the House of Savoy, signed by King Carlo Alberto in 1847, which prohibited the production of beef sausages in the whole country except for those made by the butchers of Bra.
Production was allowed so that it could also be used by the large Jewish community living in the nearby municipality of Cherasco. For purist palates, it is a delicacy to be enjoyed fresh and raw, but also grilled!
