CHIOCCIOLA DI CHERASCO

Raised on the plains of Cuneo, Cherasco snails are a symbol of our gastronomic and cosmetic culture.
The delicate meat of these molluscs, rich in protein, is the result of a farming process based on a complete biological cycle; it is one of those foods which, apart from its nutritional properties, has the ability to positively influence certain physiological functions. Thanks to their vegetable diet, Chiocciola Helix give off a flavour rich in aromas that place them among the most prized foods in Piedmontese cuisine and beyond.

Because of these properties and the special farming methods used in the Cherasque hills, it has been included in the classification of Traditional Agricultural Products (PAT).

In order to safeguard these protagonists of the culinary scene, in 1971, the International Institute of Helix was founded with the aim of enhancing and promoting the gastronomic tradition linked to the helix.
