RASCHERA

Raschera is a cow's milk cheese, it is one of the typical products of Piedmont, more precisely of the Monregalese territory, in the province of Cuneo.

The name of this typical cheese seems to derive from a series of pastures in the municipality of Magliano Alpi, in the Monregalese area.  The first historical references date back to a writing of 1400 that spoke of Raschera.

The white gold of the Monregalese, is divided into two different mentions: the dop, whose production includes the whole province of Cuneo, and the "mention of alpine pasture", which implies a production and seasoning only over 900 meters of altitude and exclusively in the following municipalities:  Frabosa Soprana, Frabosa Sottana, Garessio as far as Valcasotto is concerned, Magliano Alpi for the part bordering on the municipality of Ormea, Montalto Mondovì, Ormea, Pamparato, Roburent and Roccaforte Mondovì.

In the former, there are strong flavours, tending towards spicy, while in the alpine raschera, the characteristic scents of alpine herbs prevail.

Simple and versatile, this cheese can be used to prepare a warm fondue or to garnish Raschera risotto.
